In 2003, work accordingly began on creating a completely new specialty cheese, helped along the way by a large serving of self-belief. After maturing the cheese for approximately five months we couldn’t wait any longer. The first round was sliced into while still in the cellar. All the master cheesemakers instantly knew there would be some explaining to do here. The fine yet full-flavored taste. The multitude of aromas. The delicate way it melted on the tongue.
