Cheese cubes with mango & tomato salsa

Like a sultry Caribbean night with Swiss overtones: Mango & tomato salsa with cubes of «Der scharfe Maxx». Make your heart sing.

serves 4 Personen
100 g «Der scharfe Maxx», grated; plus “Der edle Maxx 365” or «Der scharfe Maxx» according to preference, diced (approx. 2cm x 2cm cubes)
4 tomatoes
1 mango
2 bundle mint
2 tbsp chopped pistachios
150 ml olive oil
1 zested orange peel

Preparation

  1. Quarter the tomatoes and remove the seeds, then cut into cubes about half a centimeter big.

    Pare the mango and cut this into half-centimeter cubes as well.

    Next, remove the mint leaves from their stalks and roughly chop, before pureeing together with the pistachios, olive oil, finely grated orange peel, and the grated cheese.

    Now mix the finished pesto with the tomato and mango cubes.

    Serve the mango and tomato salsa with the Maxx cubes.
