
Thai Salad with «Der scharfe Maxx» Grill Cheese
Buckle up. This salad by Christian Kuchler packs a punch. The Thurgau Michelin-starred chef has really unleashed his creativity for Studer Cheesemakers. It’s a harmonious composition of avocado, mango, cucumber, and pomegranate, topped with a red curry pesto. And to top it off, golden-brown seared «Der scharfe Maxx» Grill Cheese. Sound like a hit? 1 | papaya, peeled, seeded and finely sliced |
1 | cucumber, peeled, seeded and finely sliced |
1/2 | mango, peeled, seeded and chopped |
1/2 | passion fruit, seeds removed |
1 | pomegranate, seeds removed (use a bowl of water) |
1 | chili pepper, finely sliced |
20 g | cashew nuts, halved |
1 bundle | cilantro, roughly chopped |
1 | avocado, diced |
a little | lime juice |
Thai Pesto | |

30 g | red curry paste |
1 dl | sunflower oil |
a little | fresh ginger, finely grated |
Thai Vinaigrette | |

200 g | palm sugar |
200 ml | fish sauce |
100 g | lime juice |
100 g | cherry tomatoes |
1 | chili pepper |
Preparation

Grill Cheese
Cook the grill cheese on the grill (a grill mat is recommended) or in a skillet, searing both sides for about 3 minutes until it has a nice brown crust.

Thai Vinaigrette
Bring palm sugar and fish sauce to a boil, then let it cool. Blend lime juice, cherry tomatoes, and 1 chili pepper. Pour the Thai vinaigrette into a lidded bottle and set aside. Meanwhile, sear the grill cheese coins in a skillet until golden brown and crispy.

Thai Pesto
In a mortar, combine the red curry paste, cashews, and sunflower oil. Grate some fresh ginger and grind everything thoroughly. Set the pesto aside.

Thai Salad
Prepare all the salad ingredients and place them in a large bowl with the pomegranate seeds. Add the avocado last and drizzle with a little lime juice. Toss the salad with the pesto and vinaigrette, adjusting the amounts to your taste and spice preference.

Arrange on a plate and top with 1-2 «Der scharfe Maxx» Grill Cheese coins. For an extra kick of heat, swap «Der scharfe Maxx» Grill Cheese for the spicy «Füürtüfel» Grill Cheese. Garnish the plate with fresh herbs and a lime wedge.
