Mediterranean Sandwich with «Der scharfe Maxx» Grill Cheese

Ingredients

serves 4 Personen
Grill Cheese
8 pieces «Der scharfe Maxx» Grill Cheese
4 piece(s) ciabatta loaves (or stale bread/baguette)
Salad Filling
20 g arugula
10 g flat-leaf parsley, finely chopped
1 tomato, diced
1 red onion, sliced
1 garlic clove, pressed
Salad Dressing
2 tbsp olive oil
2 tbsp balsamic (e.g., raspberry balsamic vinegar)
salt, pepper, dried pepperoncini
Mediterranean Pesto
2 bundle basil, finely chopped
2 cloves garlic, germ removed, pressed
2 tbsp walnuts, finely chopped
2 tbsp pine nuts, roasted
1.5 dl olive oil (not cold pressed)
3 tbsp «Der edle Maxx» or Parmesan, grated
salt, pepper, nutmeg
2 figs, sliced

Preparation

  1. Grill Cheese & Bread

    Slice the bread in half, drizzle with oil, and grill until both sides are crispy. Place the Grill Cheese coins on the hot grill and sear until golden brown and crispy on both sides. By the way: for an extra kick of heat, you can swap «Der scharfe Maxx» Grill Cheese for the fiery «Füürtüfel» Grill Cheese.

  2. Mediterranean Pesto

    Grind all the pesto ingredients in a mortar. Remove the rind from the hard cheese, grate finely and add to the mortar.

  3. Salad

    Finely chop the salad ingredients and place them in a bowl. Add the dressing and toss everything together until well combined.

    Remove the bread from the grill and drizzle a little olive oil on the inside. Spread with pesto, then top with the salad filling and a few slices of fig.

  4. Take the hot grill cheese coins off the heat, cut them in half, and place four halves inside each bread. If desired, grate some hard cheese on top. Fold the sandwich closed, and voilà – your Mediterranean sandwich with «Der scharfe Maxx» Grill Cheese is ready!

Tip: This recipe is perfect for using up leftover bread.
